Bacon Cheeseburger Stuffed Meatloaf

This recipe comes to us from our friends at Lori's Culinary Creations

  • 1 1/2lb 85/15 Angus Ground Round
  • 1/2 cup Moore's Original Marinade
  • 1 tablespoon steak seasoning ((I like Two Snooty Chef's Kansas City Steak Seasoning))
  • 1 Large egg
  • 2 tablespoons melted butter
  • 1/4 cup seasoned bread crumbs
  • 4 pieces bacon (cooked crispy)
  • 1/2 Medium red onion (chopped)
  • 2 roma tomatoes (chopped)
  • 12 dill pickle slices
  • 3/4 cups shredded sharp cheddar cheese
  • 1/2 cup ketchup
  • 1/4 cup Moore's Original Marinade
  • 1 teaspoon garlic powder

1. Preheat oven to 350. In a large bowl, mix the ground beef with 1/2 cup Moore's, steak seasoning, egg, breadcrumbs and butter. Roll the mix out on a large piece of foil lightly sprayed with cooking spray. You want to have a nice rectangle about 1/2 in thick.
2. Lay the bacon on the meat rectangle. Top the bacon with the tomatoes, onions & pickles leaving room all the way around. Top with cheese. Be careful not to overstuff.
3. Using the foil as a guide, slowly and gently start rolling the meat from the small end. Continue until meat is rolled. If any of the meat breaks apart, gently pinch the area back together. Place the roll in a baking dish sprayed with cooking spray.
4. Mix the ketchup, 1/4 cup of the Moore's and garlic powder. Top the meatloaf with the sauce. Bake, uncovered for 1 hour and 15 minutes.
